Consumers are looking for solutions that work equally well in the oven, air fryer or deep fryer, without compromising on texture and flavour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>This need for flexibility has become a fundamental requirement for the food industry, which must guarantee the quality of the batter regardless of the final appliance used by the consumer<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At Molendum Ingredients, we know this, which is why we produce <a href=\"https:\/\/www.molendum.com\/en\/food-industry-ingredients\/breadcrumbs-grated\/\" target=\"_blank\" rel=\"noreferrer noopener\">breadcrumbs<\/a> using <strong><a href=\"https:\/\/www.molendum.com\/en\/future-food-industry\/what-is-extrusion-and-what-is-it-used-for\/\" target=\"_blank\" rel=\"noreferrer noopener\">extrusion<\/a><\/strong>, a technology that allows us to create versatile, varied products adapted to each technique.<\/p>\n\n\n<h3>Why does versatility matter?<\/h3>\n\n\n<p class=\"wp-block-paragraph\">A good batter must meet three requirements: adhesion, texture and visual appearance. This is crucial for frozen products that are cooked directly.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Air fryer<\/strong>: crispy, golden coatings without adding fat.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Extrusion creates a more porous and lighter crumb structure (similar to Japanese panko), which reacts quickly to the circulating hot air. This accelerates the Maillard process (responsible for the golden colour and flavour), achieving the desired texture with only hot air and without the need for immersion oil.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Deep-frying<\/strong>: firm, even coating that retains its shape and flavour even at high temperatures.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Stability is key here.
